It matters a great deal!! You should cool the food as quickly as possible, which means put it in the frig hot. If you allow the food to cool outside of the refrigerator, you are creating the perfect feeding ground for bacteria and possibly endangering the health of you and your family (salmonella, etc.). When you allow the temperature of meat and chicken to drop below 150 cooked, then bacteria can start eating your food for you.

Either keep it between 150 and 165, or in the frig it goes!

I have most often waited till its cooler just to not affect the temperature of the refridgerator. Waiting a few minutes will not ruin the food at all.

YES!!! Always let the food cool to room temp. before refrigerating. If not, bacteria can form, and then go into hybernation, and stick around until you reheat it!
