Hey guys I am cooking dinner and I have eggplant, zuccini and I am trying to figure out how to cook them and still keep the nutrients in. Boil or steam? Furthermore how do I season/dress them to make them taste good for someone who HATES vegetables. I also have fresh garlic and peppers (bell, green and sweet). Tell me what to do! :) Thanks so much!!

Ok what i would do is cut up the eggplant, zuchini and a few of the peppers and put them in boiling water for around 2-3minutes. Then chuck them on the grill to get that nice smoky taste.

then mince your garlic add 2 tablespoons of melted butter to it and a pinch of parsley.. then you have chargrilled veggies with garlic butter

Make Eggplant Parmesan with the eggplant and make Chocolate Zucchini cake for dessert!! The cake will rise nice and high. The first time I had Eggplant Parmesan, I thought it was meat instead of eggplant. The restaurant cut the eggplant lengthwise instead of into circles, didn't flour it, baked it on a cookie sheet at 500º until golden and not burned, stacked the eggplant was mozzarella, parmesan and ricotta cheese with Marinara sauce between the layers. It stacked beautifully and was wonderful.

I would slice the eggplant and put on a cookie sheet with a little olive oil and bake in very hot oven, then cut up all the otherr veggies and saute them in olive oil with butter and fresh or dried herbs.

you could always throw them in with the spagetti sauce after you saute them in garlic butter.
or if you want a lighter sauce throw in some shrimp with the veggies and toss into pasta with some fresh pepper and parmasan cheese..yum

CHOP THE GARLIC AND PEPPERS UP AND PUT THEM IN A STEAMER JUST BEFORE THEY GET SOFT AND SERVE!
