I hate to tell you this, but according to Genesis, not only was man vegetarian, but so was every other animal in the garden.
"And God said, Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat. And to every beast of the earth, and to every fowl of the air, and to every thing that creepeth upon the earth, wherein there is life, I have given every green herb for meat: and it was so." (Gen 1:29-30, KJV)

The Edenic Covenant is found in Genesis 1:26-30; 2:16-17. The details of this covenant include Mankind to be vegetarian (eating of meat established in the Noahic covenant: Genesis 9:3).

A long-standing tradition within Christianity is that, since there was no death before the Fall, animals could not have been eaten. All creatures, including humans, were supposedly vegetarian (ignore what lion's teeth look like and work with me for a moment, here, use your imagination). The Fall had cosmic, far-reaching effects, introducing death and the eating of flesh. Or at least that's the doctrine.
So, yes, part of that doctrine would mean that carnivores' teeth and digestive tracts had to be altered as a consequence of the Fall. If you can swallow a six-day creation, that's not much more to handle.

There were animals, but God allowed Adam and Eve (and their descendents), along with the animals to eat only the "green" things......until the time of Noah.
The change came about because the whole world was changed by the Flood when the greenhouse water vapor fell on the land and flooded it. After that, the earth was no longer a great moderate zone garden.
Gen 1:29-30
29 Then God said, "I give you every seed-bearing plant on the face of the whole earth and every tree that has fruit with seed in it. They will be yours for food. 30 And to all the beasts of the earth and all the birds of the air and all the creatures that move on the ground--everything that has the breath of life in it--I give every green plant for food." And it was so.

In the garden there was no death (Romans 5:12) - therefore assuming that means no animal death, Adam and Eve would have been vegetarians. Also God said;
"Behold, I have given you every herb bearing seed, which is upon the face of all the earth, and every tree, in the which is the fruit of a tree yielding seed; to you it shall be for meat." (Genesis 1:29)
However immediately after the Garden of Eden God kills the first animal by providing animal skins for them to wear (Genesis 3:21) , indicating that it was proper to kill animals, for needful use.

They were vegetarians before they fell into sin. God gave them all the "herb bearing seed and fruit" for meat. After they sinned, God killed the animal as a sacrifice for sin. Without shedding of blood, there is no remission of sin (Hebrews somewhere). The wages of sin is death (Romans 6:23) . God did not just kill the animal to make clothes for them. After that, men and animals became meat eaters and the dying process began.

Sorry, but God gave them the all the herbs that yielded seed. Genesis 1:29. It was not until after the flood that God told Noah that he could eat meat Genesis 9:3,4.
