I want a different recipe for homemade enchiladas. Nothing complicated either. Does anyone have any good recipes out there?

these are to die for. i got the recipe from my MIL, but modified it a litlle (the top is her recipes, my modifications are at the bottom).

Creamy Chicken Enchiladas

3-4 chicken breast, boiled, then cool and shred*
1 small can green chilies
1 medium onion, chopped
1 can cream of chicken soup
1 can cream of mushroom soup
8 oz. shredded monterey jack cheese**
2 cans green chili enchilada sauce***
2 tbs. butter
tortillas
sour cream
salsa
olives

in sauce pan saute the onion in butter, add soups, chilies and 1 can of enchilada sauce, bring to boil, add shredded chicken, lower heat ans cook for 5 minutes.
put tortillas in microwave to soften for about 45 seconds

place about 2-3 tbl. of chicken mixture in tortilla and roll, place in baking dish. cover with other can of sauce and cheese.
bake @ 350 degrees for 30-40 min.

garnish with salsa, olives and sour cream

*for a little more flavor i cook them in the oven with a little salt, pepper, and garlic powder, or when feeling lazy, i buy a cooked rotisserie chicken.

**i usually add more, and sometimes i mix regular jack with pepper jack cheese

***i use one can of regular green chili enchlada sauce, and one jar of really good green salsa, pica de gaillo, orsalsa verde. it definately add alot of flavor that way

How about chicken ones?

Boil the chicken either a whole one or just a few breasts till cooked. when they cool down shred them and cheese and roll them in corn tortillas. top with a red sauce and more cheese. you can also add chopped peppers into the chicken if you like. The great thing about Mexican food is that you can try different types of meat and fillings and it will always taste good.

16oz shredded mexican blend cheese
1-2 dozen corn tortillas (depending on how stuffed you like your enchiladas)
2 cans red enchilada sauce of your choice
1 medium onion
4oz can sliced black olives (optional)

1. Take half of a 16oz bag of shredded mexican blend cheese and toss in a bowl with 1 medium chopped onion, sliced black olives (optional OR you can wait and sprinkle them on top of the enchiladas), and 1/2 can of red enchilada sauce.
2. Dip each corn tortilla in hot oil or sauce to make pliable, then stuff as usual with the cheese mixture, roll up, and place in baking dish.
3. Top rolled-up enchiladas with remaining sauce, cheese, and olives, if desired.
4. Bake at 350 for 25-30 minutes or until bubbly on top.


Alternately, there is a great recipe for sour cream chicken enchiladas that involves making a white sauce (sauté minced onion in a pan until softened, add flour and butter to make a roux and cook for 1 minute, add chicken stock, shredded jack cheese, and sour cream - should be about the consistency of alfredo sauce), then add a couple cans of chopped green chiles. Mix shredded chicken in with half the sauce and stuff into corn tortillas. Top enchiladas with remaining sauce and more shredded jack cheese and bake at 350 for 30 mins or until bubbly.

This recipe isn't exact as I usually eyeball everything and can tell what it should look like, adding more chicken stock or sour cream to get the right consistency. However, as long as the sauce is relatively thick (not mayo thick, but like a thick white sauce), you should be fine. Add or subtract green chiles and salt to taste, but this type of chile is very mild so the sauce can stand a couple of 4oz. cans.

I like to substitute Boca Ground or Morningstar Farms for the meat. It tastes the same, and it's way healthier and cheaper. Try using a powdered enchilada seasoning mix rather than the canned chili. It's cheaper, and you can add as much or as little as you want. Beans are good addition too.

brown beef with onion for sauce I use mccormick seasoning in the little pouch follow the directions on the pkg. dip corn tortillas in sauce put beef mix wrap till the baking pan is full pour on more sauce ans lots of cheese cover with foil (spray with no stick) bake....

i use diced chicken. black beans. a can of delmonte 'maters n grn chilies.
it's sooo good.
you can also put salsa inside it.
i use a packet of enchilada mix or the canned stuff
