Roasted Pearl Onions
Serves 6-8
1 ½ lbs. pearl onions 2 tbsp. balsamic vinegar
4 tbsp. olive oil Salt and fresh ground black pepper to taste
4 tbsp. melted butter

Heat the oven to 350°.
Heat 4-6 quarts of water to a boil in a heavy stockpot. Add the onions and blanch them in the boiling water for just one minute. Drain the onions and let them cool slightly.
Using a paring knife, cut off the root end of each onion and gently peel off the outer skin.
Place the onions in a large bowl and add the olive oil, melted butter, balsamic vinegar and salt and pepper to taste. Toss the mixture to combine.
Spoon the onions into a heavy oven casserole dish and roast in the oven until the onions are tender and slightly golden and caramelized, about 40 minutes. Immediately serve the onions hot from the oven.
Creamed Pearl Onions
12 ounces pearl onions
1 cup heavy cream
2 bay leaves
1 tablespoon chopped flat-leaf parsley
1 garlic clove, smashed
1/2 teaspoon fresh grated nutmeg
Salt and pepper, to taste
1 cup goose stock or chicken broth
Blanch the pearl onions by placing them into a large pot of rapidly boiling water. Cook them for about 1 minute. Remove the onions from the water with a strainer, then plunge into an ice bath to stop the cooking process. Drain them, then remove the skins.
Put the onions in a 3-quart saucepan and place over low-medium heat. Add the cream, bay leaves, parsley, garlic and nutmeg. Season with salt and pepper. Cover and let simmer for 10 minutes, stirring occasionally, until thickened. Then, remove the cover and add stock. Season again. Allow to cook down for 5 minutes to tighten up the cream sauce. Discard the garlic clove and bay leaves before serving.

you can caramelize them (search for any caramelized onion (any kind of onion and u use pearls) recipe on google) or cook them in the oven. (Put them in a pan with salt peper and olive oil and if you want ginger or any other herbs) These ways are for me the ones that bring out the most of the flavor from them.

my grand mother used to make creamed pearl onions with peas and potatos, use the recipe MS. Diamond Girl gave you and add diced potatos and frozen peas

I like them with beef and sweet pepper pieces on shish kabob. (I cook the mushrooms separately because I find they burn before the other items are ready.) And then serve all with a herbed rice and salad.

I use them in my beef burgundy French stew. Also delicious baked with butter, balsamic vinagar, salt & pepper, as a side.

Put one in a martini.
Add them to soup or stew.
Roast them with heads of garlic and sqeeze them out onto bruschetta.
