Insert your boning knife under the skin and slice away using long strokes.
But really why would you? It's tasty, keeps the fish from falling apart, and contains Omegs-3s. Leave it on.

Skin a Salmon Fillet

To skin a salmon fillet: Place it on a clean cutting board, skin-side down. Starting at the tail end, slip the blade of a long, sharp knife between the fish flesh and the skin, holding the skin down firmly with your other hand. Gently push the blade along at a 30° angle, separating the fillet from the skin without cutting through either. Or have your fishmonger do it for you.

If you skin it first the fillet will fall apart as it cooks and you turn it.
Season skin and cook skin side down on medium high heat, until it is nearly half cooked, 2-3 minutes.
Turn and cook for a further 1-2 minutes.
Rest for about a minute or longer covered in a warm place.
The skin will be crisp and crunchy. It should be eaten as that is where most of the omega 3 fatty acids are that we are being encouraged to eat.
If you still want it off, it will peel off with a fork or fingers easily.

Place the fillet Skin side down.
Using a Fillet knife or a very sharrp thin blade slice between the skin and the meat of the fillet. Then using the knife as a guide pull the skin against the blade to remove it.

As someone else said, it comes off VERY easily once it's cooked, or even part way through the cooking if you'd like to flip it over to season or cook the other side. There's actually no point in fussing with cutting it off while the salmon is still raw.

Place the salmon skin side down and use a filet knife and run it as close the skin as possible letting the knife do the work.

Once it's done cooking the skin will come right off but only once it has been cooked properly.
