I just made dinner for all the people I work with. I made spaghetti, chicken fettachini, garlic bread, and a cake. Other people also brought some things. If they hadn't I probably would have made a salad as well. I made the lots of sauce and mixed it with the spaghetti noodles. The sauce was really thick and meaty. Then I put cheese on top, cooked it in the oven for about 30 minutes, 350, and made it cheesy spaghetti bake. I use store bought sauce, 2 jars and add diced tomatoes, mushrooms, celantro, italian spices, onions, hamburger meat and bell peppers. With everything I add, even though it is store bought, it tastes homemade. With the chicken fettachini I bought alfredo sauce, 2 jars. I sauted chicken tenders, skinless, in a skillet. Then chopped them into chunks. Cooked my fettachini noodles. Add the sauce, chicken and noodles and italian spices in a baking pan. Throw a handful of mozerella cheese on top, and a hand full of fresh parmesain cheese. Bake in the oven for 30 minutes at 350. I use the texas cheese toast garlic bread. For the cake, make a lemon cake just like it says on the box. Let it cool. For the icing you need a large tub of cool whip, a can of crushed pineapple, a can of chunked pineapple, a small box of instant vanilla pudding, and a small box of coconut instant jello pudding. Drain your pineapple and add it to the cool whip. Add the whole box of vanilla pudding, dry, to the cool whip and pineapples, and then half the box of coconut pudding dry. Mix it all together. Save a little bit of pineapple juice, maybe 1/2 a cup, and drizzle it over the cake. Then add the icing. It is really really yummy. If you need to, you can make all of this the night before. Just don't put the spaghetti bake and fetachini in the oven until you get ready to warm it up for serving. The cake is wonderful if served right after you make it, or if it is cold.
Oh, and as far as transporting it there, get a couple of sturdy boxes and set dishes with tops down in the boxes, and carry them in.

Mexican Layer Dip
Whether some like theirs cold or room temp, it'll last. I took this to work and it turned out fine, even after sitting out for over 5 hours. Fortunately, I have a pyrex dish and carrying case so that nothing got jostled around, but I'm sure your hubby can be very careful.
You can use cooked ground beef, ground turkey, or take the easy route and use bottled chili (I say bottled b/c I am so into Bush's chili, it is REAL chili). I'm not a fan of guacamole, so I don't use that either, and of course you can make your layers any way you see fit.
Starting from bottom to top:
Refried beans
Meat
1 lg can of Rotel, drained
Sour cream
Lettuce
Shredded cheese
Either tomatoes or a little more rotel, just for appearance
Don't forget the tortilla chips. White corn goes the best in my opinion.

I am not sure of the size of his crew. What about some type of pasta and sauce in a crockpot (or roaster if there is a large crowd) that could be made ahead and plugged into an electrical outlet to keep hot until lunch time. Send along a loaf of fresh Italian bread and you've got a meal.

Chicken Enchilada's that is what I make about once every 2 weeks for all the guys that work in the factory with my husband & they all love it.
Get some Flour Tortilla's Fill them up with Grilled Chicken, & some cheese with some taco sauce, & place them seam side down In a pan with some Taco sauce on the bottom so they don't stick, then pour more Taco sauce over the top of the enchalada's add shredded cheese to cover, cover with Foil & bake @325 for about 25 Min & that it....... They are sooooo good with all of the melted cheese on top.
I usually send along some sour cream & a side of mexican Rice & they all eat it up like crazy!!!!!

Chili is usually good. It can be made in a couple of crock pots and taken to the site. Stew would be a good offering too with cubed beef, potatoes, carrots, and other vegies.
Both would go nicely with corn bread muffins.
Disposable bowls and spoons are cheap and easy for serving

do long sandwiches. hoagies. you can get loafs of good crusty italian bread. half that and do a few kinds of meats in there. tuna too if they eat that.
you can make pasta and tater salad for sides.
maybe even some cookies. you can get those big yummy store made ones like they have in the bakery dpt.

Any type casserole that can easily be re-heated and will feed several guys...lasagna, baked mac & Cheese with ham in it, Baked beans with sliced hotdogs, spaghetti, cream chicken & noodles, saurkraut & keilbasa

Depends on how much effort you're wanting to put into it. Make sandwiches and soup. Or maybe some kind of meatloaf with garlic bread.
When we had potlucks at work, I bought sub sandwiches from a sandwich shop and chips. It's not greasy, and it's easy.
