This is soooo good! Go ahead and add your green peppers if you like that. There's no rules :-)
Garden Fresh Salsa
4 medium tomatoes, finely chopped
1 small red onion, finely chopped
3 tablespoons fresh cilantro, finely chopped
2 jalapeno peppers, seeded and chopped
3 tablespoons lime juice
1/2 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
Drain chopped tomatoes in a strainer and discard juice. Move to a bowl and add onion, cilantro, and peppers. Stir in lime juice, garlic, salt, and pepper. Add more or less of any of the ingredients to suit your taste. Refrigerate until cool.

Proportions are important. Dont' just use everything you have.. you will have way too much.
Here are the ingredients for my recipe -
3 firm red tomatoes, 1 jalapeno seeded, 1/4 cup chopped onion, cilantro chopped, garlic paste (to taste), apple cider vinegar 1 tsp, sugar 1/2 tsp, pepper to taste, oregano 1/4 tsp, 2 tbsp olive oil.
If you cut up the tomatoes into big chunks, you can put all the ingredients into the mixer briefly (about 30 secs) to chop roughly. If too much juice comes out of the tomatoes, then drained some. It is really good. I don't have green peppers in my recipe

Try this one out! This is one of my favorite recipes for salsa. Have a great day!
Quick and Easy Salsa
1 can mexican Rotel tomatoes & chilies
1 can hot or mild Rotel tomatoes & chilies
1 small yellow onion
2 large tomatoes
1-3 diced serrano pepper (1 for mild, 3 for hot!)
1 1/2 teaspoons minced garlic
1/4 cup fresh cilantro (diced leaves only)
2 tablespoons fresh lime juice
1 dash lemon pepper
1/2 teaspoon cayenne pepper
1 dash chili powder
spice essence
kosher salt
black pepper
In a blender, add the RoTel, 1/2 the onion, cilantro, serrano pepper, lime juice and spices.
Blend all ingredients.
Pour liquid into a dish and add, diced fresh tomatoe, rest of the onion and essence.
Cover and chill for 1 hour prior to serving.
P.S. I have substituted the serrano peppers for jalapeno peppers before and it worked out great. This is fairly inexpensive and a great recipe to play around with and change it up to your own tastes. It is also as easy as they come! Good luck! :)

I made fresh salsa th eother day. All I used was a clove of garlic, a 1/2" thick slice of onion, and a splash of tabasco, plus some worcestershire sauce and lime juice. Put that all in the food processor until the onion & garlic were all chopped up then added 2 tomatoes and pulsed it until the tomatoes were chopped too.
It was really good.
You could use a jalapeno instead of the tabasco, and you could add some green pepper I guess to use up some of them.

Homemade salsa is the best. Each ingredient can change the flavor of the salsa depending on how much you put in. You can control how much of each ingredient goes into this recipe.
Fresh tomatoes, the meatier the better, cut the tomatoes in half and squeeze out the seeds, then dice.
Finely chopped onion
Finely chopped jalapeno peppers (slice them length wise and use a spoon to take out the seeds and the white membrane)
Finely chopped garlic
Chopped cilantro
Fresh lime juice
Salt and pepper to taste
Add as much or as little of each ingredient as you like. Experiment by changing measurements until you find a combination you like.

I would use lime juice instead of vinegar. Also some fresh parsley and cilantro are a must. Little salt and pepper. That along with the tomatoes, onions, and jalapeno peppers. I've never put green peppers in mine but why not. That's about all there is too it. Good luck.

The best thing about salsa is you really don't need a recipe. For a change of taste grill some of the peppers before adding, adds a smoky flavor to the salsa.

12 Roma tomatoes (must use because they are meaty and do not have a lot of seeds and juice)
1 Green Pepper
1 Medium Onion
1-4 Jalapenos (depending on spicy preference)
chopped cilantro (to taste)
1T salt
1 T garlic powder (not garlic salt)
1 t sugar
Chop and mix together. After a day, it will help if you drain some of the juice off.
It is a fresh salsa receipe, but I guarantee you will love it!

The only ingredients you need is salt and pepper now. Just chop everything up and mix them together. I would add a squeeze of lime if you have some.
Since you have so many peppers, you can stuff them and bake it. Sauteed rice, ground pork, onions and your favorite seasonings and stuff them in the peppers. Bake it half way until the pepper gets half soft and half raw. Add tomato sauce on top of the peppers and bake until the pepper gets soft.
