i don't know if you want to just do a project about a certain system, or if you want to chose something abnormal to talk about....

i did a project in highschool anatomy class about heroin addiction and how it affects the nervous system/brain. it was interesting...

another idea is lactation. how women produce milk after giving birth, the hormones involved, how the body makes milk, the uterine contractions while the baby feeds due to hormone release. you can also talk about the difference between colostrum and the milk that comes in to the breast later. breastmilk has some amazing qualities and breastfeeding is very good for women! lactation is really interesting...

another idea is digestion. you can describe the gi tract and how things are digested. go over protein, fats, carbs, salts, water, etc. talk about how things are broken down by the different enzymes and where in the gi tract different nutrients are absorbed. you can show pictures and at the end give examples of different foods and how they would be digested.
