I don't know much about cycling, but getting something trued up or trued usually means lined up or straightened. Perhaps they make sure you don't have any warping?

You true a wheel and balance a tire

Say you hit a pothole and bend your wheel. You can buy a new wheel or get the shop to send it out and have it straighten. Truing is a more technical for of straightening.

A "true" wheel is one in which the rim is perfectly concentric and runs along a plane perpendicular to the axle.

A wheel which is "out of true" vertically will be out of round, and will give a bumpy ride even on a smooth road.

A wheel which is "out of true" horizontally may rub on the brake shoes at part of its revolution, causing excessive drag...or causing the brake to be adjusted looser than it should be to prevent this drag.

"Truing" is the act of making a wheel run true.

I know that with tires, getting them "trued" means putting them on a machine that will tell if they are perfectly round or not. If not , small amounts of rubber can be shaved off at the appropriate points to True it to be perfectly round. I suppose the same could be done for a wheel, and depending on the material the wheel is made of it could be ground down to make it true.

If you turn your bike upside down and spin the wheels, they should be an equal distance from the brake blocks all the way round a full 360 degree rotation. If you have knocked a wheel on a kerb or other obstruction you may have bent it slightly and the wheel may sway from one side to the other a little as it rotates, resulting in the brakes binding at one point in the rotation. The wheel is then out-of-true. Trueing is adjusting the spoke tensions progressively to return the wheel to being parallel with the centre line of the bike through a full 360 degree rotation.
