it's best if you ask her.... really, i'm sure she wouldn't mind telling you what she's like to have.
:D
it's really hard to shop for us.. especially when it comes to processed vegan friendly products. (because most of it is not vegan friendly)
to play the guessing game with soy products and the like it kinda a real MISS if you ask me.
you can't fail with fresh fruits and veggies... but do ask her about the other stuff.
i'm sure it won't ruin her visit.
:D

First you need to find out if your friend is a vegetarian or a vegan. A vegetarian is someone who won't eat meat but still eats dairy, eggs or even seafood sometimes. If she is vegan, than she eats nothing with any animal by-product. Vegans are MUCH harder to shop for. If she's simply a vegetarian, than I would get her veggie burgers, yogurt (if she likes it), tofu (which comes in a variety of forms- you can even get barbecue tofu), a lot of fresh greens for salads, soy milk, and whole grain cereal. Also, I would suggest waiting until she arrives before buying the bulk of the food. That way she can write you a list or even go with you. Most vegetarians know that they are hard to shop for and she probably won't have a problem helping you out, as she will be getting what she likes as opposed to veggie burgers everyday.

i'm vegetarian too and i'm pretty used to making my own food at friend's houses. but it would be really nice if you guys would just try not to have too much meat at main courses. or, just have something similar for her to eat. like if you guys are grilling burgers, have a veggie burger for her. there are also veggie hot dogs, veggie chicken nuggets, even veggie chili. try to keep the meat seperate from the other food because most people don't like picking stuff off of food. like if you're having spaghetti and meatballs, don't mix the meatballs into the sauce, just have them in a seperate bowl so that she can still have the meal without the meat. and is she vegetarian or vegan? because that makes a huge difference.

If i were you, I'd conduct business as usual, just because you eat meat don't mean you never eat a veggie....I'm sure you will have salads and fruits bread and things.....I must point out. A vegetarian will not make meat for you......and if you were to attend an event, i'm sure you would eat what was available and make do......(nice of you to want to be considerate, but trust me on this one.....you are not going to have a total meatfest are you?)

It would help if you knew what kind of vegetarian she is - some vegetarians eat dairy products, for instance, and some don't. Veggie burgers and a nice salad sounds like a good choice. And whatever side food you'll eat with your meat (rice, potatoes, etc.) will be good for her to eat, too. :) Enjoy your meal!

I've been a vegetarian for years, and so has my boyfriend. There are plenty of options.
You can try:
Vegge burgers (which come in a variety of flavors)
Vegge chicken patty (parmesean chicken, I suggest) that you can cut up into little squares, put them in a frying pan with some oil (after the oil is already heated from the pan) and cook at a medium heat. Add some spices and salt and pepper.
Vegge steak or chicken strips. cook same as above but add a vegetarian sauce like bbq sauce or honey mustard.
A tofu dish with rice. Cook rice like usual. And buy FIRM tofu, cut into squares and cook same as above in the frying pan add sauce and spices.
Pierogies (with potato, not cheese)
Tacos with meatless filling (or you can fill with the tofu and rice)
*All the above are very quick, and simple to make, plus they come out delicious!*
Any type of pasta with meatless sauce.
Tater tots as a side, or steamed vegges, mashed potatos, rice.
This should all be available at your local grocery store.
They even have vegge cheease!
If you're eating something with milk, buy soy milk just in case.
Good luck!

A meatless pasta dish is always good.
Buy some type of noodles (Ziti or Penne pasta) and a good marinara sauce for a simple vegetarian meal.
Raw veggies....broccoli, carrots, celery

My step daughter is a vegan. I fixed her stir-fry veggies with soy sauce. I didn't use any chicken base (naturally) but did use sesame oil to bump the flavor. Lots of different kinds of veggies - bok choy, celery, carrots, water chestnuts, mushrooms, onions, garlic, Savoy cabbage. I served it with a fruit bowl. She had plenty to eat. I didn't have to buy anything special that I wouldn't use myself.

Now your being silly...
You wait for IT to get here,, then take IT to the store,, and IT can fix the food IT needs.
You just continue to take care of your family.
If IT wishes to share a special veggie treat enjoy
If IT wishes to sample your delicious roast pork fine also.
