There are two main things that turn skin yellow.
An excessive ammount of vitamin a in your diet can cause your skin to yellow. This happens alot in babies, when they are fed to many carrots.
If you don't eat carrots for every meal, its more then likely jaundice. Jaundice is causes by liver problems. It can be VERY serious. Many things can cause your liver to disfuntion, you should talk to your doctor about your problem.

Jaundice comes to mind first. Eating a large quantity of things like carrots or pawpaws (Papaya) can make the skin turn yellow as well.
