If you don't know this, you aren't even close to opening the restaurant. You should have visited everyone of your potential competition and gotten a good idea. Here in Dallas, the BBQ places all have what is almost a separate building attached with huge cooking space.

I have to agree with the others, If you haven't already sourced your smoker and cooker options. You are far from even laying out just a business plan. The size and type of smoker will dictate everything else about your business. It will even effect your recipes. So the "I have a bunch of good recipes I cook at home" won't work in a business application. Just adding in house cooked pulled pork, ribs, and smoked chicken to the menu took me weeks of research on smokers. Then came recipe development. All this because I loved the stuff that came out at home on my brinkman off-set. Asking here isn't where you need to start.

I don't mean to rain on your parade, but if you plan on opening a restaurant, shouldn't you know these kinds of things already? If you want to be a success, you should have an intimate understanding of all the restaurant nuances prior to investing in such a financial venture.

why not buy a couple of smokers and place outside and use firewood to heat it?Ive even seen thai restaunts grilling their food outside on patio.Its not going to be any good unless you have the real smoked flover no fake stuff.Three qualities to good restaurant are.Great food ,clean,fast quality service.As my old boss use to say you can always tell a great restaurant by the line outside or cars in parking lot.

You need the Question the restaurant Owners,,, inspect their equipment,,, and then the commercial suppliers
