He's eating everything and there aren't any dietary restrictions. I am just not a very confident cook, and would like to jot down some great ideas as what to feed him, so if I get stuck, I have a lot to reference. Even if it's something basic, please share!

He's already eating everything, and has been for awhile. I am not looking for individual foods to feed him, but rather meals to make. Certain kinds of sandwiches, main courses, balanced meals.

I'm not much of a cook, so here's what we do:
Breakfast- Quaker low sugar instant oatmeal - there are tons of flavors & they're all good (about 1/2 a portion) with a cup of milk or juice
Lunch- PB&J, grilled cheese, corn dog nuggets, chicken nuggets, fish sticks, some kind of veggie- my son is really into steamed sweet peas right now
Dinner- any of the Lunch ideas or whatever my husband & I eat (provided it's nothing too spicy & is tender enough for my little one to manage). My son really likes sloppy joes and lasagna (made by the good folks at Stouffer)
Snacks- Dole fruit parfaits , goldfish crackers, Nilla wafers, Gerber fruit roll ups for toddlers
Bedtime snack- a cup of milk & a few low sugar cookies- we like the Planters 100 calorie pack of peanut butter cookies (maybe 1/3 of the package)
We tried the Gerber graduates & my son really dislikes them, so we have moved on to other things.

I think some of the other answers you have already received are wonderful!

I was not a believer in the fish sticks, but I tried them with my son, and he really did like it. Also chicken nuggets. He is getting to the stage where he likes to dip his food into sauces!

Instead of plain grilled cheese (which my 15 month old loves), I add some chopped up white meat chicken. I also make him his own ham and cheese sandwiches.

Baked sweet potato (with just a little bit of cinnamon sugar).

Mac and cheese (I use easy mac because I am not a very confident cook either) but after I stir in the powdered cheese, I add a little bit of milk (it just tastes better that way).

The other day I made a lunch that was a hit with the baby and my husband. Really easy too!
I made regular white rice and mixed it with a can of black beans and made black bean and rice quesadillas.
I put a flour tortilla in a lightly greased pan on the stove, add some shredded cheese and the rice and beans, fold it over and cook each side like a grilled cheese. You can top it with salsa or chopped tomatoes, and low-fat sour cream too if you like!

Applesauce and yogurt (the applesauce is also a good food to let your baby try to use a spoon on his own as well).

Fluffy French Toast

INGREDIENTS
2 teaspoons all-purpose flour
2 tablespoons and 2 teaspoons milk
1/8 pinch salt
1/2 eggs
1/8 teaspoon ground cinnamon
1/8 teaspoon vanilla extract
1/2 teaspoon white sugar
2 thick slices bread

DIRECTIONS
Measure flour into a large mixing bowl. Slowly whisk in the milk. Whisk in the salt, eggs, cinnamon, vanilla extract and sugar until smooth.
Heat a lightly oiled griddle or frying pan over medium heat.
Soak bread slices in mixture until saturated. Cook bread on each side until golden brown. Serve hot.

Applesauce

INGREDIENTS
4 apples - peeled, cored and chopped
3/4 cup water
1/4 cup white sugar
1/2 teaspoon ground cinnamon

DIRECTIONS
In a saucepan, combine apples, water, sugar, and cinnamon. Cover, and cook over medium heat for 15 to 20 minutes, or until apples are soft. Allow to cool, then mash with a fork or potato masher.

Today my boys (14mos) had grilled cheese and cut up strawberries. Yesterday they had leftover chese pizza and applesause. The day before they had some cooked rice with cream of chicken soup over it and some sliced banana. edit: lunch is also when I give them some juice with their meal. Just some ideas.

Ham and cheese scramble is a good source of protein and dairy!
Chicken breast (in a pan with a little oil, ten minutes each side) and then with the you can cut it up and mix it with anything and everything. Any kind of veggie, any kind of cheese, anything at all.
Brown rice with scramled eggs and peas and carrots (a healthy version of fried rice).

well my 15 month old loooooooves fish sticks. you can get some that are somewhat healthier than others. (he is celiac so we have to get a certain allergen free brand) but you can just bake them in the oven and you have agreat fast hot lunch. give him some apple slices or a banana with it.

Hiya mom! My 13 month old eats, grilled cheese sandwiches, fish sticks, spaghetti o's, ravioli, chicken tenders/nuggets, meatballs, occasional cheeseburgers and pizza with the sauce and cheese wiped off.... fruit, pasta, vege's. And that about covers it. I just switch it up from day to day.

Some days, she doesn't really want anything, so I just give her crackers, or cheerios just to have something in her... I am not a chef either, so I try to switch from food to food each day... Take care!

Start him off with carrots . They are color friendly and healthy. Keep things simple and small ...finger friendly. try chicken , pasta (mac and cheese) or a simple burger. Just make sure to cut very small bites.

Maybe cheese and lunch meat. But if you want to cook something then anything goes, spaghetti, Hamburgers, Hamburger helper etc.
