I know this is a cliche but it's a cliche for a reason:
Ansel Adams
I always took him for granted until I actually saw some of his pictures at the Art Institute of Chicago. They're the most amazing pictures I've ever seen.

There are so many DIFFERENT photography tallents out there. Each one has a different quality. One is the quality of the exposure. Another is the quality of the printing. Then you have artistic ability to lay out the picture so that it is more pleaseing to the eye. You have photographers that take photos of people. This is difficult because the person is usually NOT at ease. Then you have landscape photographers that can see and capture what mother nature gives us. Food photographers can make food look beter then it really is. I was a photographer and enjoyed ANSEL ADAMS the most because of his quality of capturing the grey and white tones and putting it on paper. He was a master layout printer and selectect the best part of the scene to present. I think that some photographers are good a take photos of the moment. In Photography school they called it E.D.L.s'. (Every day life). That was hard because being in the right place at the right time was sometimes hard.

Lord, what a question!
I have been influenced by many in different areas of photography.
For photojournalism, which is the area I primarily work in at this time, it has to W. Eugene Smith. He's been my Gold Standard for decades. People my age use the term decades so it doesn't make us sound old to ourselves :) There are many others that have influenced me, but if I had to limit it to one, it would be him.
For fine art photography, I would go with Ansel Adams for landscapes and technically. However, I am prejudiced. I learned the Zone System from him at a workshop he used to give at Yosemite many years ago. There are so many newer fine art photographers as the scope of the field expands that influence me in one way or another that it would be hard to name them.
For commercial on location photography, again Ansel Adams would certainly be an influence for certain kinds of photography and in contemporary photographers, probably Bob Krist.
Again, in photojournalism for the natural world and human social photography, almost any National Geographic photog.

I don't really have a favourite, just any blond who looks gorgeous and sexy and has fabulous shoes. I think brunettes look gorgeous too, but brunette wouldn't suit me so I tend not to bother wanting to look like them.
