I've always felt that the only difference between eating meat and not eating meat (aside from the obvious health benefits of NOT eating meat) was finding foods that have the chewing texture of meat - portobello mushrooms, seitan, extra firm tofu. You can season your food to your pleasure but to avoid meat, eat foods that have the chewy texture of meat so you don't miss eating the meat.

I don't really have much else to add. However, when I thought I wanted meat, I did think of what the poor animals were forced to endure and that stopped it.

Some of my favorite sites:
www.veganoutreach.org
www.vegweb.com
www.chooseveg.com (I like this site as the organization, Mercy for Animals, is local for me [I live in Columbus] and have worked with them in the past.)
www.vegan-food.net
www.fatfreevegan.com
www.veggieboards.com
www.vrg.org
www.vegsource.com

Also, searching should produce some good results as well.

When I went vegetarian - every time I had a craving for meat, I would imagine the slaughtering process. I know it's disgusting, but trust me - it WORKS!

experiment with different meals. since i went veg 3 years ago, i have eaten all kinds of new and tasty foods. go to different websites and check out recipes. many fast food places have vegetarian options. taco bell has bean and rice burritos, subway has veg. sub., burger king has a garden burger which is very good.

Don't keep meat in your house, and don't go anywhere that serves meat...stay away from it.
