This simple recipe turns out perfectly tender and fluffy baked potatoes every time, with a crisp caramelized skin.
INGREDIENTS:
4 russet potatoes, scrubbed
1 Tbsp. solid vegetable shortening
PREPARATION:
Preheat oven to 350 degrees F. Dry potatoes well and rub all over with solid shortening if you like a crispy skin. If you prefer a softer skin, skip this step. ***** each potato several times with a fork.
Bake in 350 degree F oven for 1 hour and 15 minutes. Remove potatoes from oven and immediately cut a slit in the top of the potato to release steam. Serve immediately. 4 servings

This is a very good recipe that's not necessarily baked potatoes, but a variation on it. Cube up 5 - 6 red skinned potatoes and boil until they are just tender. Mix this with about 1 cup of ranch dressing and a little bit of butter. Taste at this point for seasoning, you might need to add extra salt and pepper. Then put in a baking dish that you have greased well. Bake this uncovered for 30 minutes on 450. It will get brown and crunchy on the top. Then top with cheddar cheese, bacon or bacon bits, and french fried onions in that order. Put it back in the oven until the cheese is bubbly and brown. It's so good.

VERY GOOD TWICE-BAKED POTATOES
Scoop out your potatoes, leaving a rim of the potato inside next to the skin. Place all the potato you scooped out in a bowl. Mash it, add melted butter, sour cream, a little salt and pepper. Add cooked, crumbled bacon, shredded cheddar or cojack cheese, and diced green onions. Refill the potatoes. You can then put on a cookie sheet, put in the freezer, and freeze your extras. Once frozen, wrap in saran and place in zip lock bags. For the ones you're going to eat right away, place on a cookie sheet and bake in a 350º for 10-20 minutes or until the filling is hot and the cheese is melted. You want lots of bacon and cheese in these!

How about a twiced baked potato?? You scoop out the insides of a baked potato and mix them up (like you were mashing them) with butter, milk and cheese. Then you put the inside back into the potato shell (skin) and sprinkle paprika on top!! YUMMY!!! (just dont let them bake too long and dry out - yuckie)

2 baking potatoes
2 tbsp mayonnaise
1 tsp curry paste any type
1/4 tsp worcestershire sauce
1/2 tsp lemon juice
2 tsp creme fraiche
Cooked chicken breast strips
pepper & salt.
***** the potatoes and cook in the microwave wrapped in kitchen towel, for 10-12 mins until cooked through or cook in a conventional oven at gas mark6 /200 c/400f for 1-1.5 hrs.
While the potatoes are cooking, whisk together all the sauce ingredients. (Mayonnaise through to creme fraiche), season then mix in the chicken.
When the potatoes are cooked, cut a cross in the top of each potato and spoon the sauce into the potato.

BAKED POTATOES SUPREME
2 large Idaho potatoes, baked
1 egg, hard cooked, peeled, and grated coarsely
4 cups broccoli, chopped (optional)
1/2 cup grated mozzarella cheese (reserve a few spoonfuls for topping)
4 strips bacon, sautéed and crumbled or chopped
4 teaspoons butter (2 for each potato)
1/4 cup sour cream
1/3 teaspoon each salt and pepper
Wash and cut up broccoli (optional), set aside.
Scrub potatoes, then rub with a small amount of vegetable, peanut or olive oil. Cook in microwave until fork tender, about 10 minutes, depending on size of potatoes and wattage of your oven.
While potatoes are cooking, steam or simmer broccoli until just tender but still crisp. When broccoli becomes a bright green, drain, remove from heat and return to pan with cover briefly to finish cooking. If broccoli becomes an olive green, it's overcooked.
Cut an oval circle from top of potatoes and scoop out meat while still hot. In a small bowl, mash together with cheese, bacon, and sour cream and butter and coarsely chopped egg. Season with salt and pepper to taste. Return mixture to potatoes.
Top with remaining cheese and broil 5 minutes more, garnish with fresh herbs and serve.
Variations: Add 1-2 tablespoons chopped fresh chives, dill, or rosemary. Use olive oil instead of butter. Use onion dip instead of sour cream. Use Parmesan cheese instead of mozzarella. Substitute Serrano ham or prosciutto for bacon.

easiest, yummiest baked potato.
bake in microwave or oven until tender and soft in middle.
cut open lengthwise, then make slits horizontally.
add butter.
add sour cream.
add grated sharp cheddar cheese.
add sliced green onions.
add bacon bits.
its hella good but definitely not for people on diets ;)
