what about a nice photo album or scrapbook with your son's picture on the first page? then other parents can add a picture when their child leaves and they have a nice memory of all the kids.
or a cork board to put photos on, same idea, can be added to

A hamper with choccies, wine and savoury treatsfor them to enjoy after work one day. Or I know you said not to get them all something, but individual plain white coffee mugs filled with treats of your choice and tied up with cellophane wrap and ribbon is easy and cheap to do. Attach a name tag or paint their name onto each mug.
Or maybe, just flowers and a card addressed to all the ladies in the 0-2 rooms. This still shows your appreciation
I am doing the mug thing for my daughters teachers at school and sons daycare teachers this year for christmas and the mugs have only cost me about $15 for 5.

Well I think you are starting a very expensive trend!!
You see when hes done in this room you will want to buy them a gift and so on and so on
With my children and i have four, each time they start a new class, before leaving the last one, i get them to draw a thank you picture for all the staff that helped them, and then they usually hang it in the classroom!

A huge box of Thorntons Chocolates. I used to work in a nursery and a box of chocolates always went down a treat.

i think something nice to give them each would be something made by your son out of salt dough its really easy to make
1 cup flour
3/8 cups salt
3/8 cup hot water
mix all together and knead for 5 mins after you have finished the dough takes about 1-5 days to dry naturally or put them in the oven at 200 degrees for 2 hrs
you could make shapes for your child then he could paint it add sequins ect for example you could make xmas tree ornaments i know its early but its a thought!

I would say a gift card to a nice restaurant, but I doubt they can take there lunch at the same time.Maybe a gift basket w/ assorted chocolates, candies, and relaxation items.Like bath beads and gels.

Cupcakes or a cookie assortment, preferably home-baked, would be a nice gesture. Baked goods can be personalised with the names of the staff or even your son's name for an extra-special touch.
However, even a picture of your son pasted on a homemade thank you card would be appreciated!

send them lunch over 1 day.
If you send wine, they can't drink it there together. They would have to take it home and not really share it. Alcohol isn't allowed in a public daycare (well not in the state I'm in).

Cater a lunch for them. As a teacher I always appreciated food in the breakroom. Teachers have varied and short lunch breaks, so make it buffet style. Get a couple other parents to help you and get the director's permission first.
How thoughtful of you.
