Preheat oven to 375F.

Spray foil-lined baking sheet with cooking spray.

Shape into patties and place on baking sheet. Season to taste.

Bake for 15-20 minutes, or until dry and a bit firm to the touch.

If you want them to be golden all over, I recommend flipping them halfway through baking or switching your oven to broil for the last minute.

You didn't ask for one, but here is a recipe for Tabouli to go with the falafel. Let me know when dinner is ready =)

Tabouli Recipe

Ingredients:
1 cup dry bulgur wheat
1 bunch flat leaf parsley
1/2 cup fresh mint, chopped
5 green onions
5 plum or Roma tomatoes
1 cucumber
1 lemon's juice
1/2 teaspoon allspice
salt and pepper
extra virgin olive oil

Directions:

Soak bulgur wheat in water for 20 minutes, or until bulgur expands and softens.
While waiting, chop up the parsley, mint, green onions, tomatoes and cucumber.
Mix all ingredients with a wooden spoon. Drizzle some extra virgin olive oil depending on your taste.
Chill for at least 2 hours. Overnight is best.

Soak beans overnight. Put all ingredients in a food processor and blend until its combined, Scraping down the sides as needed. don't add any water or extra oil. Bake or fry in olive oil until golden brown, take time so the insides are all cooked as well.
This recipe goes well with a simple tahini sauce.
