I've tried pickling just about everything imaginable. Picked summer sausage, and pickled eggs are my top two favorites.
Pickled carrots are nice too. An of course the old stand by 'Pickled Dills' (cucumbers) are right up there also!

Daikon, either inaka (country) style or Tokyo bar style (soaked in sake dregs and miso).

Smells awful, but mmm, mmm, so good.

Pickled Red Cabbage
Pickled cucumber & onion.

This is a tough one, I like lots of pickles. Number one. Pickled garlic. Pickled eggs with beer.

in our house these are the choices
hubby --pickled eggs
one daughter--beets
2nd daughter--giant dill pickles
son --almost anything
me --sweet or bread and butter pickles(homemade of course--but not by me)
