In a gas oven, the large upper part is for baking/roasting. The pull-out tray at the bottom is for broiling--the flames will be right over your food. In an electric stove the baking/roasting goes on in the upper part of the oven, the broiling below that. Email me if you need more info.

The upper heating element in the oven is used to broil. When you broil you don't close the oven door and you put the oven rack up one position above the middle rack position . That way the unit keeps coming on to cook ( broil ) whatever your broiling .

Look on the inside of your oven at the top--is there a heating element mounted there? If so, that element will come on when you turn your oven to "broil". If you are going to bake in your oven, that element and the one on the bottom will go on and off at intervals so that your product bakes evenly--i.e. on the top and the bottom.

If you are baking cookies, for instance, you will want your oven rack to be in the middle of the oven so that the tops and bottoms bake evenly--if you are baking several batches at one time on two racks, you should switch the pans, from top to bottom about midway through the baking process.

If you have a convection/traditional oven--read the book.

Good luck!

If you mean the top rack at it's two higher levels, it's for broiling. The other levels are for baking. You should have a manual with your oven that would show you rack placements. If not order one from the company that made your oven model.

Broil. If you look at the top of your oven there should be a heating element on the "ceiling". Thats to broil your food.

Baking, roasting and grilling are almost the same way of cooking, while frying you need to cook it with oil or butter broiling is in water.
