Taste is such an individual thing, Wine is meant to be fun, drink whatever wine you like to drink and dont worry about what people say you should!

I am a former chef and like the shrimp I would have a wine that can handle spice, like a German Gewerztramiener or Reisling, if you like reds a French Pinot Noir or an American Red Zinfindel.

A good dry white chilled would go best I think.
The reds would be a but heavy on top of the dish.
A blush or zinfandel would work too but I like a good dry crisp white with my spicy seafoods.

stay with a chilled white (chardonnay)--- why ?---- the tannins in any red will tend to make the wine taste more bitter when mixed with hot spices .

A robust one. Chardonnay if you're going for white, and Zinfindel if you're inclined to red.
