Butter or shortening. Just rub a very thin layer over the entire inside of the pan with your fingers or a paper towel.

Depends on what your baking. With most everything, use crisco. If baking a cake, sprinkle with flour unless it's chocolate or devils food, then sprinkle with cocoa. For baking other items, like chicken, add nothing. You can also use oil or butter.
