I always just use a steak knife. Or I look to make sure that the sides of the cake are pulling away from the edge.

use a dried spaghetti noodle
Or take a sharp knife and stick in the middle. If the knife comes out clean, then the cake is done.

I press gentle down on the center of the cake with my index finger and see how slowly it rise back to the top.

Just lightly touch the cake in the middle if it springs back it is done if it leaves a little dent it is not ready...HOPE I HELPED
