So im grilling chicken tonight at I was wondering what to make along with it. I usually make mashed potatoes and some type of vegetable (corn, mixed vegetables, etc.), but I dont want to do this again as it tends to become rather repetetive... So, what else should I make to go along with this chicken? Any ideas are welcome. Thanks!

Toss slices of zucchini, peppers, potato's and other veggies you like in olive oil, garlic, salt and pepper and grill with your chicken.

Try throwing some cut-up fresh vegetables, such as tomatoes and squash, into an aluminum foil packet. Add butter or olive oil and salt and pepper before cooking on the grill. Bake a potato on the grill and husk your fresh corn, but do not remove husk. Remove corn silk, add butter, rewrap in husk, and grill that along with everything else.

Try a nice salad with different mixed greens, or a pasta or potatoe salad. I like grilled chicken served over some hot linguine mixed with a can of italian style diced tomatoes and a lil basil..

grill corn on the cob (remove silk, keep the husk attached, wash corn, realign the husk and place on grill for 30 minutes) and a fresh green salad with homemade blue cheese dressing (mayo, half and half or 1 or 2% milk will work, rice vinegar or a very small amount of regular vinegar or whatever flavor you have will work, garlic powder and garlic salt or whichever you have, crumbled blue cheese. Mix by hand.)

A pasta or potato salad. Or stir fry vegies and rice. I also do red potatoes baked in a light garlic/margerine glaze. You can always change what you normally make just by changing the seasonings and sauces.

Try a green salad with cherry tomatoes and black olives. And if you can, go all the way into the Mediterranean mood and add dices of goat cheese.
Pop up a bottle of wine and voila! you have a sophisticated dinner on a Tuesday night.
Enjoy!

Roast potato, parsnips, pumpkin, sweet potato, all go well with grilled chicken.
Alternatively steamed cabbage, cauliflower, spinach, silver beet.
