Maize is the original corn the Indians grew. The corn had many colors in the cob and was a very dry.
As hybrids of maize were done it was found the yellow and white kernels had more moisture.

Definitions depend a bit of where you live. For me, corn refers to the sweet corn you eat with peas and carrots. Maize is field corn, not so sweet, and usually ground up into polenta or for tortillas.
