MEXICAN GUACAMOLE
2 medium avocados
1/2 tomato, chopped
1/4 onion, minced
squeeze of lemon juice
garlic powder
salt
optional:
some chopped cilantro
1/2 jalapeño, minced
Scoop the avocado out into a bowl using a spoon. Mash with a fork. Squeeze in lemon juice, add salt and garlic powder to taste, chopped tomato, minced onion, (chopped cilantro, minced jalapeño), and mix.
Tip: To keep the guacamole from turning brown, put the seed from one of the avocados in the bowl of guacamole. It keeps the guacamole bright green.

Tostones,deep fried plantain chips. Yummy. Or mix some corn and salsa into some black beans, a little cilantro. Or how about a stuffed jalapeno? Just remove the seeds fill with a good jack cheese and maybe some bacon crumbles, roast em in the oven until all of the cheese inside is melted and the pepper starts to blister or char a little.

Hot black beans--buy the canned type, add some cilantro and Tabasco, or Pigeon peas(gandules--not the green variety)--in the can, add cooked bacon and pepper flakes--put over yellow rice, but add chopped sweet onions to the top of either of them.
A salad with peppers, onions, cucumbers, shredded carrots, and avocado, with a tequila, olive oil, sugar and ground peppercorn dressing is also good. Easy to make. Make sure to put lemon juice on the avocado so that it doesn't turn brown before you serve it.

Peppers and Cheese
6 poblano peppers
2 cups oil for frying
8 ounces queso
1 cup all-purpose flour for coating
Core and seed poblano peppers, cook peppers in a hot pan until peppers are blackened evenly. Place the peppers into a bag and let the peppers steam to loosen the skin.
Heat oil in. Remove the black skin off of the peppers. Divide the cheese into each pepper, and secure with a toothpick. Coat the peppers in flour. Fry in the hot oil for about 3 to 5 minutes per side.

Salad is always good, when I make one and we're having tacos I put taco sauce on it for the dressing.
Maybe some seasoned tater tots. Here in the Midwest we have Taco Johns and they have Potato Oles, they are flat tater tots with a special blend of seasoned salt on them. Very yummy

I usually do refriend beans, warmed in a bowl, then I sprinkle cheddar cheese on top with a dollop of sour cream and some scallions to garnish. However, keep in mind if you buy refried beans, make sure to buy the vegetarian ones, because the regular ones are made with lard!!!!!

Just the tacos, homemade salsa and homemade guacamole is what I serve! We use lettuce and tomatoes on our tacos.

You can do refried beans or a light salad with corn, black beans, cilantro and tomatoes (I don't know the name of it, but it's very good) And just don't forget the sour cream ;-)
