This is the recipe from James Martin

bunch of mint
pinch salt
4 tbsp boiling water
4 tbsp white wine vinegar
1 level tbsp caster sugar



Method
1. Strip off the mint leaves, sprinkle with salt and chop finely.
2. Place into a jug, add the sugar and pour over the boiling water, stir and leave to cool.
3. Stir in the vinegar and taste.
4. Add more water or vinegar and adjust seasoning to suit your taste.

This is a little random, as I don't use exact measurements. You just add the ingredients until it looks and tastes right. Basically you roughly chop up some mint leaves into small pieces, pop them in a bowl and add about three parts balsamic vinegar to one part normal vinegar. Leave the lot to infuse for at least an hour and voila!

Always use fresh mint, though. The dried muck in a jar doesn't work nearly as well.

I use a hole bunch of mint, 1/2 pt of vinegar and 2 tsp of sugar, put it in blender until mint is chopped well. No cooking and certainly no water. Family won't have lamb without it.

Pick the fresh plants & strip the leaves.
Roll a few leaves into a bundle, sprinkle with sugar.
Slice finely with a very sharp knife, & repeat.
Sprinkle more sugar & chop in the other direction.
Put into a small bowl, partially filled with vinegar.
Store in a bottle, if making for more than one meal.

mix it in a pot with vinegar and olive oil
add a little sugar and mix

Buy some in a jar them add vinegar to dilute it.
