There are far too many to choose from. I'm a Christian, but I read books on other religious beliefs and philosophies fairly frequently. One that I've recently enjoyed is "Gonzo Judaism" by Niles Goldstein.

I read the bible and I'm not christian (and never was).
I learned a LOT, but mostly in a negative sense - that the whole religion is built on contradictions and misinterpretations, sadly. People die because of errors in translation... *sigh*
