The coating on a tablet is what inhibits its release and absorbtion. The drug is released when it reaches the proper ph, this is what allows drugs to be released in different areas (ie. stomach, liver, intestines, etc.) Liquids don't have this protective covering and are more quickly released but are limited mainly to release in the stomach.
