putting this mix in a airtight sterile jar with a one way air valve on the container. Afterwards putting more yeast and sugar in this and reworking it? Is this brandy, wine or what, It kicks like a mule!

I would say it is a fruity wine! You can make wine from any fruit as long as you use yeast and sugar! I learned this in culinary school in my wines class! It's just not traditional wine!

If you don't distill it, it's not brandy.

It would be a *fortified* wine. Regular wine doesn't have sugar in it.

Sounds like good old-fashioned moon shine! You can make apple cider this way or other kinds of "Ades".
