I have been on many cruises but two stand out as my best. One was on a Princes cruise line ship, the Island Princess and the cruise was out of Ft Lauderdale, FL. to the Panama Canal. It was a 12 day cruise that had stops in Costa Rica, Costa Maya, Mexico; and Ocho Rios, Jamaica also. I loved the ship and all of the Princess ships I have been on have been very nicely decorated and have had very comfortable cabins. Their food and entertainment is also great.
THE best cruise I have been on was on the Royal Caribbeans' Brilliance of the Seas and it was a 12 day cruise out of Barcelona, Spain to the Mediterranean. The port stops included Nice (including Villefranche, Monaco and Monte Carlo); Florence/Pisa, Italy; Rome, Italy; Naples, Italy; Athens, Greece,and the Greek Isles of Santorini and Mykonos. And then also Ephesus, Turkey. This cruise had a lot of history and must see sights, like the Vatican and the Colosseum in Rome, Pompeii near Naples, the Leaning Tower in Pisa, the biblical city in Ephesus and the Acropolis in Athens. It has spectacular scenery in the Greek isles and other places.
The Brilliance of the Seas is my favorite ship of all of the more than 15 cruises I have been on. It is pretty new and has the latest conveniences and amenities, like the new pillow top beds. I like best the layout of the ship and the fact that the casual dining area has provision for eating outside on the back of the ship. Many of the new ships don't have this feature. RC has 4 ships with these identical feature and I have also been on one other of them, the Jewel of the Seas
We went to the Med at the beginning of October and the weather was just perfect. I even sat out on the balcony at night and it was pleasant.

I'm glad you asked about cruises that people have actually been on. A lot of people will give you the canned speech about how a cruise is bad without ever having set foot on that ship. My husband and I have enjoyed all 4 of our cruises (three on Carnival fun!) absolutely. But my favorite was the Sun Princess out of Ft. Lauderdale with a Southern Caribbean itinerary. 10 days in heaven. The Sun now belongs to P and O line. But my next cruise will be on another Princess ship, perhaps the Crown or Emerald. I'd like to do the Ruby when it comes out depending on the itinerary.

The best cruise line I've been on is Royal Caribbean - it offers a nicer atmosphere than Carnival, but is usually the same price or cheaper.
My favorite location is the Caribbean, or the Western Caribbean with stops in Cozumel and Cancun. I'm sure Alaska is gorgeous, but I crave the warmth of the tropics. Baja Mexico is all right, but not really worth getting off the ship.

Best cruise so far: Mexican Riviera NCL Star 8 day cruise out of LA. Acapulco/Ixtapa/PV/Cabo
The pros, Why the best?: Beautiful ship! 4 ports of call. We had a Balcony which we enjoyed very much, Freestyle concept. You can be seated at a table by yourself or ask to be seated with others and make new friends. No specific seating time.
The cons, in your case: The NCL Star goes to Alaska in the summer :(
Also liked the Monarch of the Seas RCCL.

Celebrity has a great line of ships. I have been on a few different ones, each time going to the Carribean. They are great. It is very classy, not a carnival like carnival cruise lines and not a kid show like Disney. There is also plenty to do with great shows, amazing food, and other activities.
If I was picking for you, Id take a Celebrity cruise to the Southern Carribean. When I went the stops were San Juan PR, St. Thomas VI, St. Kitts VI, Barbados, and Aruba.

Mine was the circle Hawaii cruise. It was seventeen days from Los Angeles and back. There were five wonderful days at sea coming and going. We went to five ports on four islands. We sailed on Holland America's Rotterdam. It is a magnificent ship. I have been on seven other cruises and this was the best by far. The food was the best I have ever had on sea or land. The service was beyond outstanding. Hawaii was the ultimate delight. Nothing beats Hawaii as a spectacular vacation. Beautiful scenery, warm beaches, volcanoes, waterfalls, you name it, it's there. The ship provides many options for tours. By all means go to the Polynesian Cultural Center, but don't go to the Luau there. It is awful. That was the only bad thing on this trip. Check and see if they improved it. All of us on the tour (about seventy of us) complained to the tour desk on the ship when we got back. Where ever you go I hope you have a great time.

I like Crystal the best because of the size of the ship, the elegance, the fabulous food and service, the itineraries, and the ambience. They have the best entertainment I've ever seen at sea. The ships are immaculate and the embarkation and other logistics of cruises are handled very well.

i would chouse royal carribean we went on a 7 night and we didn't want to get off!! we went on freedom of the sea!!
then we went on norwegin cruiseline and it was the worst cruise ever!! the staff were awful and the whole ship was nasty and the food was sick!!! we also went on the disney cruise and i wouldn't go on that cause there are so many kids and the staff are bad. The carnival cruise was great if you want a party ship that ship has partys all night long!!!

i would say celebrity out of galveston to the panama canal-costa rica is beautiful.
The mediteranean itineraries sound really wonderful. what i would do is go to cruisecritic.com
and search around to find some reviews of cruises. That said taking them with a grain of salt, would take all that into consideration. cruiseclues is a great website too for planning.

We went to Panama Canal on Celebrity cruise lines out of Galveston, Texas
Out of our 12 cruises it was the most enjoyable.
Costa Rica was a port of call and it was fantastic...The canal is a site to behold!
This cruise line is top notch, and I would highly recommend a balcony.
