I make my husband and me a breakfast sandwich. Takes about 7 minutes each.
I combine an egg, add some milk, a little pepper, and real bacon bits. Pour in to a small omelet pan sprayed with non-stick spray over low-medium heat. Cook like an omelet fold in half and then half again. The cooked egg should be about the size of one piece of toast.
Toast two pieces of bread.
Place a slice of cheese on one piece of bread. (after the egg is done I put on top of the cheese to melt it a little)
Can add jelly or any condiment to the other piece of bread, if desired.
Put together to make a sandwich.

i do a lot of quick breakfasts in the microwave for my teenage athlete son. he needs a high cal protein & carb diet. sometimes i make french toast or pancakes the night before & he reheats in microwave & covers w/ warm syrup. (not what i would eat but he doesn't care)
also:
2 eggs stirred well, cheddar cheese to taste, some broken up tortilla chips in small plastic container. cover & heat 1 minute on high in microwave. stir. heat 45 seconds more. turn over to release from plastic container on plate. put some salsa on top & serve.
if you just use eggs add a tablespoon of water before microwaving. you can of course also use this as a sandwich filler in a tortilla, bread or croissant.
fruit smoothies are also well liked by kids. i do banana,strawberry, vanilla combo the same morning or the night before. good luck!!!!

I make the most wonderful crock-pot oatmeal, which lasts for a week in "Loaf Form" after the first serving. For this idea, you'll need the hearty "Steel Cut Oats" which are granular in appearance, and not the rolled flakes. You want a ratio of 4 parts water to 1 part oats. Place this in your crockpot, with a 1/2 teaspoon of salt, late at night, on low.
The next morning, you'll wake up to cooked oatmeal. It will be slightly foamy on top. Just stir this in, and add at this time, 1/4 cup of half and half or milk. Stir to mix this in, as well, and then serve with your desired toppings.
Once you've finished breakfast, pour the remaining oatmeal into a buttered loaf pan, and cover with cling film.
Each morning, you can slice off a piece of "Oatmeal Loaf" onto a microwave safe plate. Top with butter, brown sugar, or more cream if you like, and microwave very briefly -- only a minute usually -- for hot, bubbling oatmeal. The loaf holds it shape while cold, but as soon as you nuke it, it goes right back to soft tender oatmeal in your shallow bowl. Best of all, this loaf lasts all week in my fridge. It's much, much more delicious than instant oatmeal, and fun to slice off and top as desired.

Hoosier Hard-Boiled Egg Casserole
35 min 5 min prep 4-6 servings
8 hard-boiled eggs, coarsely chopped
2 cups chopped celery
1/2 cup chopped walnuts
2 scallions, chopped (white plus green parts)
1/2 green pepper, diced
1 cup mayonnaise or Miracle Whip (light is OK)
salt (optional)
pepper
1 cup grated sharp cheddar cheese
1 (1 ounce) bag potato chips, crushed
Toss together the first 8 ingredients (eggs through salt and pepper).
Top with grated cheese and sprinkle with crushed potato chips.
Bake at 350F 30 minutes

Put this in crockpot the night before.
Crockpot Egg Casserole
32 oz. bag frozen hash brown potatoes
1 lb. cooked ham, cubed
1 onion, chopped
1 green bell pepper, chopped
1 Tbsp. olive oil
1-1/2 cups shredded Cheddar cheese
12 eggs
1 cup whole milk
1/2 tsp. salt
1/2 tsp. pepper
PREPARATION:
Spray inside of slow cooker with nonstick cooking spray. In small skillet, cook onion and green pepper in olive oil until crisp tender. Let cool about 10 minutes. Place one third of the frozen hash brown potatoes in the slow cooker.
Add one third of the ham, onion, green pepper and cheese. Repeat layers, ending with the cheese.
In a large bowl, beat the eggs, milk and seasonings until well mixed. Pour over the ingredients in the slow cooker, cover and turn on low. Cook for 10-12 hours, until casserole is set and eggs are thoroughly cooked.

Breakfast Burritos...
Scrambled eggs, with cooked bulk sausage crumbled, diced peppers/onions and canned chilies... Top with shredded Cheddar cheese or even sliced american cheese roll up and eat ! *heat tortilla for 30 sec. in micro to make it easier to wrap...
Oatmeal Cookie Pancakes.. *can be made ahead/frozen heat in micro/serve....
2 C. bisquick dry pancake mix
1 C or 1 envelope quick cooking oats made with milk.. Set aside..
1 tsp. cinnamon/ 1 tsp. vanilla
2 eggs beaten
either one ripe banana or 1/2 C applesauce omit oil in recipie
2-3 tablespoons brown sugar a bit less if using flavored instant oatmeal
1/2C-C of warmed milk if batter is too thick..
Mix together dry ingriedients and Mix together wet ingredients in a seperate bowl.... Fold together...DO NOT OVERMIX batter should have lumps... Heat griddle or pan with butter and make pancakes.. They should be light/fluffy...
Grab n Go they do not need syrup.... Good luck

Make hard boiled eggs and slice them. Set aside.
Toast slices of white bread. Set aside.
Make this recipe:
Argo White Sauce
1tlb argo corn starch
1 cup milk
2tlb butter
1/4 tsp salt
1/8 tsp pepper
combine argo & milk in a saucepan,stir till smooth.
add butter,salt & pepper
stir constantly,simmer over medium heat for 1 minute.
makes 1 cup
Put eggs on top of toast, and put this sauce on top-yum, yum, yum.

Breakfast burritos: whip up a couple of scrambled eggs, add in diced onion and pepper if you like, maybe some sausage, add some shredded cheese, place in the middle of a warm tortilla, put some taco sauce or salsa on if you like, roll up and eat.

my favorite breakfast food was when my mom got bread, used a cup to cut a small circle in the center of the bread, spray a pan with cooking spray and put the bread with the cut out circle on the pan then she cracked an egg in the cut out let it cook, flipped it over let it cook on that side, then used the extra circle as a cute lil topper..and i ate dippy eggs n toast...thid is now what i make almost everyday for my nieces
