I work full time and am heading back to school. Does anyone have meal planning ideas that will allow my boyfriend to handle dinner (preferably just heating something up) with some variety and ease? I have a crock pot that I love to use but I know that if I cook something for him to eat all week long, the same thing, he will get board and just get burgers or pizza.

My biggest advice is to when you go shopping is to buy things in "kits".. Like a "kit" for spagetti (tomato sauce, noodles, canned mushrooms etc..) that way he can open the fridge and put it all together.. You can also still make things in the crock pot just freeze some of the leftovers. Then you will have something he can heat up at a later date.. Just be sure to mark it well with the date frozen and what it is... I like to take just a regular pork/beef pot roast brown it and put it in the crock pot with some beef broth.. Let that cook all day REMOVE from broth and pull it apart with two forks... Mix with BBQ sauce and put on a bun.... Serve with cole slaw or baked beans and it's done ! Meatloaf is pretty easy and you can make it ahead with instructions to cook.. there are several things you could do especially since you already have the crockpot. You can make stews, chilis, pot roast, lasagna and other things. Then split it into single servings and stick in the freezer. This would give him plenty of options that he can just take out and heat up. An added bonus is this is better for you than microwave meals. I do this for my home and it works like a charm because we are usually too busy to cook everyday and so the weekends we can make up some things. There are also places where you can go to make meals and they are made to be frozen and eaten later.

In this day and time there are many many easy to prepare meals. Look in the meat department and you'll find quick and easy meals with all the needed items. You might consider purchasing a precooked chicken from the deli and cutting and placing in the freezer. Something else to think about is in the freezer department. There is a great assortment of items that might help you out. Things like meal in a bag.

You could make a bunch of things, and freeze them. Then, he just needs to warm them up. You could make slices of lasagna, whole casseroles, breaded chicken cutlets, tomato sauce (I'll asume he could boil some water to make pasta), mini pizzas, meatloaf slices (makes yummy sandwiches). . .All these things will stay good for a while in the freezer, and he would have a lot of options. Just means you need to spend some time on the weekend cooking!

If you're not there, let him fend for himself. It will make him appreciate you more. I got married in June and have been cooking every night for my husband. When I am not home, he's stuck eating a pizza or something of that nature. He tells me later, "I had to eat pizza today and realized how nice it is to have a real homecooked meal."

If you are planning his meals when you're not around, he'll never realize what it's like without your help.

You can grill a lot of different meats on the weekends and then he can heat them up. Buy frozen veggies and a microwave steam to cook them in, that way he can cook/heat up just enough for him.

Keep some salad mix and salad ingredients. For another side option.

Make up a batch of spaghetti sauce and freeze single portions for him to thaw - boiling noodles is easy, takes about 10 minutes.

When I make meals I freeze them so that way I can just pull them out of the freezer and into a pan and all the works done. One thing I use is pre-cooked chicken. I dice it up and cook it and then cool it down and freeze it. That way you can just get it out and heat it up with use in taco's on pizza or with gravy. also pre-cook and freeze pasta and put the sauce in a seperate container. never freeze pasta and sauce together, it makes it mushy.

Will you have time to cook and freeze on the weekends?

You can freeze most casserole, lasagna, chili, meatloaf,
chicken casserole, make and separate into containers enough for one or two.
