As was mentioned before if you want a really great light an flaky pie crust, use lard. My grandma and my mom did.
I would not think of using anything else when cooking southern fried chicken. I don't use that often, more likely to use olive or canola oil. But there some things that lard is better for.

only the people who are genetically defective and get fat.
millions of people use lard daily. and have been doing so for thousands of years,, long before crisco and trans-fat nonsense

Lumps of Lard have their uses my dear. Do not underestimate the power of a lumpalard.

Lard actually makes the best tasting chips (French fries) and roast potatoes.

Commercially, it is used to make scores of useful products, from soap to car wax to preservative cleaner for fine leather garments to paint to machine lubricants. For the individual homeowner - ain't much you can do with it. I've been known to save it until winter in the back of my freezer and then put it in a mesh bag and hang it out by the bird feeder like suet for our fine feathered friends.
