Soft & Chewy Vanilla Butter Cookies
1 cup Butter Flavor Crisco
1 cup sugar
1/2 cup brown sugar
2 eggs
1 1/2 tablespoons water
1 teaspoon vanilla
1 teaspoon butter flavor extract
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
Preheat overn to 375 degrees.
In a large mixing bowl, beat together Crisco, Sugar, Brown Sugar, Eggs, Water, Vanilla& butter flavored extract until well mixed.
Add the Flour, Baking Soda& Salt to the mixing bowl and mix well.
Cover and refrigerate dough for 30 minutes.
Roll dough into 1 inch balls, slightly flatten and place on ungreased cookie sheet.
Place in preheated oven and bake for 8-10 minutes or until light brown.

These have a very old-fashioned flavor that old folks usually love. Be sure to check for any diet restrictions before just handing them out!
Iced Ginger Cookies
Makes 2½ dozen
Cookie
2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
3/4 cup vegetable oil (preferably canola)
1 cup sugar plus 1 tablespoon (for sprinkling)
1 large egg, at room temperature
1/2 cup light unsulphured molasses
Icing
1/2 cup confectioner's sugar, sifted
1 tablespoon solid vegetable shortening
2 teaspoons water
1. Preheat over to 350 degrees.
2. In a small bowl, combine the flour, baking soda, ginger, cinnamon, and salt. Set aside.
3. In a large bowl, on the medium speed of an electric mixer, beat together the oil and sugar for 2-3 minutes. Add the egg and molasses, and beat well.
4. Add the dry ingredients and mix thoroughly. Drop by rounded teaspoonfuls onto ungreased cookie sheets, leaving several inches between for expansion.
5. Sprinkle lightly with sugar. Bake for 12 minutes. Cool the cookies on the sheets for 5 minutes, and then remove to a wire rack to cool completely.
6. To make the icing: Combine the sugar, shortening, and water, and beat until smooth and creamy. Cover until ready to use.
7. When the cookies are completely cool, spread a very thin layer of icing on each cookie with a small knife or spatula. Let the icing set before stacking the cookies or they will stick together.
(My note: I make a double recipe of the icing. I must put on more icing than they do because I run out with the original recipe's amount. But I also don't double the vegetable shortening (Crisco) -- about the same amount and just more water and conf's sugar.)

SOFT OATMEAL RAISIN
COOKIES
2 1/2 cups of Quaker Oats (quick or old fashioned, uncooked)
1 cup flour
2 eggs
1/2 teaspoon salt
1 cup butter
1 teaspoon vanilla
1 cup brown sugar
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 cup raisins
Mix the salt, butter, vanilla, and brown sugar in a big bowl. Add the sugar, baking soda, eggs and ground cinnamon until fully mixed. Stir in the flour, mixing thoroughly. Stir in the Quaker Oats until you see no flour. Mix in the raisins.
Drop by large rounded spoonfulls onto a ungreased cookie sheets (about six per batch).
Press the cookies down to make them flat before baking.
Bake in a preheated 350°F for 20 Minutes or until brown at the top.
SOFT MOLASSES COOKIES
3 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ginger
1 teaspoon cinnamon
1/2 cup molasses
3/4 cup evaporated milk
3/4 tablespoon vinegar
1 cup shortening
1 cup sugar
1 egg
Preheat oven to 375°F. Stir together flour and baking soda, salt and spices.
Combine milk and vinegar.
Cream shortening and sugar thoroughly; add egg and molasses. Beat well.
Add the evaporated milk and vinegar alternately with the dry ingredients. Mix well.
Drop from spoon onto greased baking sheet leaving 3/4 inch between them.
Bake at 375°F until slightly brown on edges or about 10 minutes, depending on size of cookies; watch carefully to avoid overbaking.
OLD FASHIONED SOFT SUGAR COOKIES
Sift together in large bowl:
3 1/4 cups flour
1 teaspoon soda
1/2 teaspoon salt
Add:
1/2 cup soft butter
1 cup sugar
1 egg
1 teaspoon vanilla or nutmeg
Beat at medium speed for 2 minutes.
Add:
1/2 cup thick sour cream
sifted flour mixture
Preheat oven to 375-400F degrees.
Beat at low speed until well blended (1 1/2 minutes). Roll out lightly on floured board to 1/4 inch thickness. Cut and sprinkle with sugar.
Put on prepared cookie sheet. Dot a raisin in the middle and bake about 12 minutes at 375-400 degrees.

When you serve them cookies, serve them also a hot glass of milk or tea.
Show them to dip it in then suck the cookie.
