They're not making them properly and/or they're not fresh.
They should be light it the middle with a thin, crisp outer crust.
The baguettes I had in France were wonderful; nothing like the chewy, long-shelf-life, full-of-preservatives stuff they offer here.

Well you could buy some tasty soup to dip it into. I hate too crusty or hard rolls too.

they should be slightly firm/crispy and quite soft inside ....they're rarely made"correctly"
