I think both-

The fake part-you know the chefs are briefed on the SECRET FOOD that they need to use. They have to plan their menus & what their people are to make. So there is NO SUPRISE, that the showy part of Iron Chef

The real part is the cooking. The plating and the judging

I still love watching it. Best show Food Network has

The only thing real about it is when you watch them cook. There is no possible way that they don't know what the "secret ingredient" is. Otherwise, how could the network have all of the exact ingredient readily available for them. The chefs run around putting recipes together knowing exactly where each ingredient that they need is? Come on....not possible!!
It is still entertaining though...and they still are very talented at what they do!

The challengers and iron chefs are not specifically told what the secret ingredient is, but they are told it will be one of three things. This is why it takes them no time to put together a menu and cook it in an hour. Otherwise, they would have to bring too many things in case they needed it.

I think that it's real, but I agree that there is no surprise with the special ingredient. The chefs have to be briefed beforehand in order to be really prepared.

food network had a show a while back that explained that..they tape the opening many times to get different reactions..so yes..the chefs DO know the "secret" ingredient before hand..the drama is for entertainment..the rest of the show is fairly authentic

These programs cannot reinvent themselves and hit a rut after a season or two. I think it's as real as it can get, though the editing of material makes it a "fast" viewing.
