I think a Muscat de Rivesaltes (serving temp.10 °C ) would do fine. Have found the "Ice wines" from Washington state to be a very good accompaniment to cheesecake. They are very sweet and should stand up to the lemon if you don't use too much. Also try Vintage Port & cheesecake. Because of their richness and complexity, port wines can make a bold impression when paired well with foods. Port is most traditionally served at the end of a meal or with dessert. But it also pairs well with many appetizers and main courses.

Originally I thought you should get champagne because it is her birthday, but...
red wine will:
1. Pair much better with the dessert.
2. Quiet patio time at the end of a long night is made for wine.
I know nothing about wine so ask you fanciest grocery store about a good wine for the raspberry cheesecake. Or ask the bakery, you never know.
If you do go for champagne try it early like before dinner. Katherine has a good idea of dropping in a few fresh raspberries in the champagne. 2 or 3 is perfect. Your girlfriend would really appreciate the attention to detail.

I personally think red wine is a more romantic (and a bit better tasting)... I don't know too much about champagnes, but I'm not a big fan of those so... yeah.
I think red wine would probably be the most romantic sorta thing. Regardless of the drinks... dude; you get FAT kudos for being so good to your girlfriend. Shes gonna love you man.
--i saw the above comment about sweet drinks. you have cheesecake -> sweet drinks afterwards are brilliant. I tried some Lemon Liquers & Orange Liquers (for after dinner stuffs) in Europe and they are pretty great. I think BevMo would be the best place to look for stuff like that.

Champagne is lovely. To compliment the cheesecake, you might consider dropping a couple of fresh raspberries into it for decoration, unless it's a very good champagne. If she likes sweet drinks, you can also consider an after-dinner liqueur, like Chambord (raspberry), Frangelica (hazelnut) or Amaretto.

champagne is good. but since you are serving a raspberry cheesecake, a nice shirhaz wine will definitely bring out the berry flavor. i recommend yellow tail shirhaz. good luck!

A dry champagne would be perfect . You can also offer a fruity white wine or even a white zinfandel for a variety. Offer coffee for those who like it with dessert , spiked with a splash of Bailey's Irish Cream.

Jessrew, my answer to your question is that after your food, what you should serve her is fresh fruit juice that is fat free and natural. I think this is better than any hot drink
