Why ruin a perfectly good five lb chicken by boiling it ? You'll end up with a dry, stringy , tasteless bird. Roast it instead. Rub some olive oil or melted butter , salt and pepper all over the chicken, throw a halved lemon and some chunks of onion in the cavity , roast on a rack inside a baking pan at 350 degrees for an hour or so, tenting with foil if it starts getting too brown. It's done when the juices run clear when pierced ( use a long fork ) and the thigh bone wiggles easily. Let it rest for 10 minutes before carving it up so the juices stay in the bird.

The best way I found to boil a whole chicken and have the meat nice and tender and very flavorful I saw on a TV show. Bring a large pot of water to boil, add a heaping teaspoonful of chicken base to the water and stir. Make sure it's back to a boil and add your chicken, making sure it's covered in the water. Wait for the water to come to a boil again then cover the pot, turn off the heat (totally off) and let the pot sit until it is room temperature. The chicken will be cooked perfectly and you can then use it for whatever you want. I've fixed it this way many times as have my parents (now 84 and 86). Once it reaches room temperature, prepare the chicken (like debone it, shred it, whatever you are goind to do with it, and then refrigerate it. What the chicken base does in the water is keep the flavor of the chicken from leaching out into the water.

Why would you want to boil a chicken for. Just put it in a roasting pan and put it in the oven at 350 degrees for 2 hours. It will taste better.

2-3 hours depending on how high you have the temp. I prefer to have it on low to med and cook it for 3-4 hrs as it's more tender :)
