It doesn't have to be cold; just a place that is not warm. And it does have to be dark. I put potatoes in a wastebasket in the kitchen, in a plastic bag opened at the top, with a paper bag on top. You could also just use a paper bag. If the potatoes start to rot, they will be wet and oozy - that's why I use plastic. The paper bag is just to keep them in the dark. Then I just pull out a potato when I need it. I put onions in the same wastebasket.

RE:
Potatoes: Is it OK to store red potatoes in my frig?
I don't have a cool, dark place to store potatoes. I cook only for myself. How long will they keep in the frig?

it's ok since you frig the red potatoes not to long..it's about 2 days if want to still have best frehness and best taste with your potato...
if you had your potato longer than 2 days in frig, don't waste them..make some potato salad or some soup from that..

With every day pass, our country is getting into more and more trouble. The inflation, unemployment and falling value of dollar are the main concern for our Government but authorities are just sleeping, they don’t want to face the fact. Media is also involve in it, they are force to stop showing the real economic situation to the people. I start getting more concern about my future as well as my family after watching the response of our Government for the people that affected by hurricane Katrina.
According to recent studies made by World Bank, the coming crisis will be far worse than initially predicted. So if you're already preparing for the crisis (or haven't started yet) make sure you watch this video at http://www.familysurvival.tv and discover the 4 BIG issues you'll have to deal with when the crisis hits, and how to solve them fast (before the disaster strikes your town!) without spending $1,000s on overrated items and useless survival books.

If you store any kind of potato in the refrigerator, the starches in the potato will change to sugar. If you don't mind that, then there's no problem. I believe you can store them in there until they start to wrinkle - if they've been in there that long, that's too long. I think the longer you store them, the less nutrients they will have.

Use them before they sprout. Keep them dry.
Enjoy. Try red potatoes fried up with purple onions and minced garlic. Wonderful!

Storing potatoes in the fridge causes the plant sugars to intensify, which can cause them to darken or caramalize at high heat such as frying.

yes, I have stored all types of potatoes in fridge for as long as I have been cooking. you can tell whether or not they are good when you go to use them...make sure they look fresh and not shriveled, mushy, etc.
