I have an Olympus WS-300M voice recorder (link http://www.olympusamerica.com/cpg_section/product.asp?product=1193&fl=4 )
and saw that the sampling rate for both HQ and Stereo HQ are 44.1 kHz, but the frequency response for the stereo HQ is 100-15,000 Hz versus 100-12,000 Hz for HQ. I am just using this to record lectures, and was curious if using double the memory would result in significantly better recordings, also taking into consideration that two microphones are incorporated in lieu of one.

A lecture has no stereo information, so simple logic say no (use mono).
However, this is something very easy to try. Record part of the lecture in mono and part in stereo. Then you decide!
