I do marinate my steak before cooking and I prefer it well done. But it seems that every single time I cook a steak or any kind of meat, it chars a bit. I know it is supposed to brown and get dark. I am not too sure if I have it too high of heat. I spray the pan before cooking, but it does not seem to help. Any suggestions would greatly be appreciated, thank you!

Depending on the marinade, the charring could be the marinade burning. If there are sugars in the marinade, I'm willing to guarantee that the char is the caramelization of your marinade. You don't usually have to worry too much about it. If you like your meat well done, I recommend marinating the meat out of the fridge. Depending on your local weather, it's not dangerous for the meat to sit at room temperature in your marinade for an hour. This helps the temperature of the meat, so the outside doesn't overcook before the inside has time to cook. On the electric stove, start with high heat and sear both sides while on high heat. Then turn the heat down and cook slowly until you get to your desired doneness. If not, you can sear on the stove and then broil in the oven on the closest rack to the broiler.

Okay. I have an electric stove myself. What did you marinate it in first of all that does belive it or not make a difference in how it cooks if its something sweet its going to carmelize and get darker. so look at what you marinate in first. I just put a couple pats of butter on our steak and some garlic and cook them slow not fast.. and about med heat untill I feel the inside is the way I want it then I turn up the fire to give the outside a darker look. sometimes but they always turn out great. D

It would help if you bought a grill pan. They are not expensive and your steak will look more appetizing. Also if you could enjoy it a little more rare the flavor will be better and it will be more tender. Don't forget to let it rest for about 5 mins. after cooking so it will be juicier.

use a grill pan, on medium high heat, no need to spray, about 7 minutes per side depending on the steak. Ask your butcher when you buy the meat how many minutes per side.

Don't fry. Bake it in a liquid in a big pot on top of the stove or in a pan in the oven (I use water) or broil it under the broiler.

baked steak is good, or under the broiler, you might have better luck doing it that way??? good luck
