Going with a bunch of families, with toddlers, need to feed about 20. We got the Monday breakfast. So we'll need to have it in the cooler since Friday - although may go into a town to get supplies. Just dont want to buy much besides ice at the overpriced grocery store.

One idea I had was freezing banana bread. Otherwise theres always milk and cereal of course, but thats kinda boring.

I would say for the kiddos, things like muffins, banana bread, fresh fruit and cereal are best. They wake up hungry and don't want to wait for the long drawn out process of cooking breakfast outdoors.

But for the grown-ups (and for me anyway) the BEST part of camping is breakfast. Smelling that morning coffee...mmmm. If you have electric at your campsite have someone bring an electric coffee maker because it can make so much at a time. You can also just boil water and use those coffee singles (not too bad in a pinch..don't forget sugar and creamer for those so inclined). Bacon and sausage is a must. Link sausage works better because it doesn't "stick" like patties. You can freeze those items hard and they should last on ice. I also love scrambled eggs and fried potatoes. If you do baked potatoes the night before save the left overs (you can even leave some skins on), add some garlic powder, chopped onion and green pepper. Fry in a pan or wrap in foil (oiled or sprayed with Pam) and cook it on the campfire in the morning.

No matter what, camping is about fun, so whatever you decide on will be a hit. Just go out and have a great time.

I wonder if there is a camping site around that would give you some cool ideas with cooking over an open flame. What to bring for pots and pans etc.

If I were you I'd want to do something like that.. Something that would wow everybody else.

when we camp out for races, at home we make breakfast burritos... usually ham or bacon with eggs, hashbrowns, some with jalapenos and some without, and some cheese, whatever you like. Steam the tortilllas, fill each one up, fold it, wrap in a piece of foil, place then in a gallon freezer bag, freeze....then in the morning on your trip, if you have a fire going, you can place them over the grill or fire for a few minutes in the foil, and wala, hot breakfast burritos.

When I went camping with my dad and brother we always had pancakes, eggs and coffee of course it was a fishing trip so we always had fish also, but I guess my favorite dish to make and eat was the boyscout eggs that is a toddlers favorite
Boyscout Egg per person:
1 slice bread
1 egg
heat fry pan with whatever you use, spray, butter, margarine oil etc.
Make hole in center of bread to place the egg in. place bread for each person in hot grease, put egg in center of bread and cook egg to the doneness of each persons liking. turn bread over once to brown both sides.

my personal family favorite(and that of my girlscout troop) is potatoe mush

cook one pound of bacon (can increase it or use several pans to cook for your large group)

drain and save grease. cover and keep at least warm the bacon once it is cool to the touch crumble it to use later.

use the grease from the bacon to cook one bag of thawed hash browns. cook till slightly browned,

add one dozen eggs, and cook thru.....

readd bacon crumbles, and cheese....and top with cheese and cover till cheese is melted.....

serve with salsa (for the big kids..) or ketchup for the little ones and serve with tortillas for added fun ...roll up egg mixture and make some terriffic burritos....yummy!!!!
