Alright, so you want something filling, something sweet, something salty, and a drink.
Something filling would be maybe leftover fried chicken, leftover pizza, a sandwich with ham, turkey, or bologna with cheese (no mayonnaise, just mustard), and things like that.
Something sweet would be a snack cake, a packet of cookies, a packet of fruit snacks, or a fruit roll-up.
Something salty would be potato chips (NEVER the lite variety, it gives people "brown drip"), pretzels, pita chips, or tortilla chips. I would also say nuts, but since your children have nut allergies, you can't use those.
Something to drink would maybe be a small bottle of water. Juice makes them hyper and is bad for their teeth.
Not too big, maybe half a liter or a pint. You can put it in the freezer the night before, so when it's lunch time, the sandwich is cold, and the water has warmed up enough to drink, but it's still cold.
Maybe you could also put in a short note, like "I love you, Mom". That would help.

There are TONS of options, my daughter is in 4th grade and has almost always had cold lunch. There are all the sandwich options(since Peanut butter isn't an option) there's left over roast beef (cut small, so they don't choke) any sandwich meat options, jellies. Then there's a whole row of chips to choose from at the store, also, cracker(goldfish, cheese crackers with cheese), or those cracker sticks to dip into cheese. Make sure to give them a fruit or veggies--just to keep a balanced diet--there are even fruit/applesauce cups--VERY handy!!! And last of all juice boxes or pouches. Most importantly--to kids anyway--the dessert!!! Cookies, brownie, chewable candy(most schools don't allow suckers b/c of choking hazard!)
Hope this gives you some ideas!!
Also, my daughter LOVES left over pizza!! You can always place a small ice pack in the lunch box!

What about something in crescent roll dough, like a pizza rollup,packets, that you cook first. This wouldnt be bad cold. You could look on pilsbury.com for ideas, although that dough isnt the healthiest, you could also make your own, and use whole wheat, flax, etc.
Wonder if theres something you could layer too in a tupperware. Like a 7 layer salad but more kid friendly.

Target and Walmart have great Thermoses that will keep food warm.
How about Crackers with cheese and pepperoni
veggies with a ranch dressing or yogurt dip
Cottage cheese and peaches.

it is about varing what is in the sandwich. You already have great sugestions. I don't know if you have them where you are but what about savoury rolls. My kids today have cheese and bacon rolls. There are many varieties. There are many meats and salads you can put in a sandwich. Your kids will probably have a favourite and want this often. Just ask what they want, I find this is easiest

cold cuts rolled around green pepper strips, or just rolled up
apple slices with strawberry preserves to dip

ants on a log (celery stuffed with strawberry preserves or cream cheese and decorated with raisins)

peeled oranges in a ziplock
pretzels with cream cheese or cottage cheese to dip
homemade trail mix (raisins, chopped dried apricots, chopped pepperoni, be creative)
sliced cheese, salami and cucumber slices
cold fried chicken
thinly sliced ham rolled around cream cheese
Plenty of water to drink. Juice boxes tend to make kids fall asleep after the sugar rush is over.

i wouldn't worry about thermos because they can catch up on a hot meal in the evening at home with you later in the day

crackers are always fun! send them with cheese slices, sliced lunch meat, pepperoni, tuna, etc. I bring lunch to school myself, and these are easy to eat and fun! hope i could help!
