Easy baked chicken..
rinse and totally dry the whole chicken. (Then disinfect the sink)
rub with margarine or olive oil on a paper towel.
sprinkle with Lowry's seasoned salt & pepper
Bake at 350 until it looks right, nice and golden brown, and the leg meat practically falls off.
I like red potatos with green beans and almonds
Scrape the potatos around the midle with a peeler so a little skin is left at each end, boil until fork tender, mix in a can of kitchen cut green beans and coat with butter. Stir in either almond slivers or French Fried onions (broken up).
Yum!

Baked Chicken:
1 roasting chicken- 3 or 4 lb.
1 9x13 inch roasting dish. the snugger the bird the happier it is. You need enough room to turn the bird while baking.
1 small rack to hold the chicken up from the bottom so the skin will get crisp. and the inside meat will stay moist.
butter or margarine melted, or olive oil - what ever you have
your favorite spices. mix these together set aside.Example of herbs to use: thyme, rosemary, marjoram, oregano, or sage, or just salt and pepper, (dried or fresh).
Heat oven to 500 degrees. Place the chicken, breast side down on a rack in a rosating pan. Begin roasting for about 20 minutes, spoon some of the olive oil mixtue over it, then turn the bird, breast side up. Baste again, then again after 7 or 8 minutes, at this point the breast should be beginning to brown ( if not give it a few more minutes) Turn the heat down to 325 degrees, baste again, and roast until an instant - read thermometer inserted into the thickest part of the thigh reads 160 - 165 degrees. Total roasting time will be under an hour. Before removing the chicken from the pan, tip the pan to let the juices from the birds cavity flow into the pan. If they are red let cook another 5 minutes. Remove the bird to a platter and let rest for about 5 minutes. While it is resting, pour the pan juices into clear measuring cup and pour or spoon off as much of the fat as your can. Reheat the jjuice, carve the bird, garnish and serve with the pan juices.
Baked Potatoes with green and red bell peppers
Place a well scrubed potato in foil, I sometimes grease mine because I like the buttered skins. slice your peppers and place as many slices as you like in with each potato, wrap and place on oven rack and bake right along with the chiken, when the chicken is done so should be the potatoes and peppers. Each person can fix these the way that they want to while eating.(salt, pepper, butter, sour cream etc.

The easiest way to bake a whole chicken is to rinse it, pat it dry, season it w/ salt & pepper. Stuff it w/ 1 sliced carrot (lengthwise) , 1 sliced celery rib (lengthwise) , some parsley & 1/4 sliced onion.
Roast a five lb. chicken for about 1.5 -2 hours in a pre-heated 350 degree F oven.
If you are using cut up chicken, then arrange the pieces in a baking pan & scatter the veggies around. Bake for 45 minutes to an hours.
Chicken is done when juices run clear.
For the potatoes - follow this recipe. Note - the bacon can be omitted. Just use a bit of cooking oil instead of the bacon fat.

I'm trying to loose weight so baked chicken is one of the best meal for me.. I usually just make it simple too since i work 7 days a week and dnt really have much time to cook. marinate the chicken with salt pepper garlic powder and itallian seasoning. then bake it at 350 degrees. If you dnt want it too dry before the chicken bakes completely put together ketchup, 1 medium orange squeezed, soy sauce, 2 tbsp sugar and 1/4 cup of pancake syrup put them together in a bowl and microwave for 2 mins to dissolve sugar then pour them on your chicken 20 mins before it cooks. this prevents the sauce from burning. the potatoes i usually bake them seasoned with salt pepper garlic powder and italian seasoning. then the peppers roast them on the stove top till the outer skin peels off. cut them in strips and season with salt pepper and italian seasoning drizzled with olive oil. when the potato cookes mix them together with the peppers makes a perfect but healthy side dish.

The olive oil spray is what you use first. Olive oil has antioxidants and is excellent for maintenance of your circulatory system which include arteries, veins and capillaries. I want for you to have a delicious experience but a healthy one as well. I use simple ingredients for basic cooking of a baked chicken. I spray olive oil on the chicken and in the pan. I put garlic powder, oregano, basil and seasoned salt on the meat. I seal it tightly with two pieces of aluminum foil. This helps lock in the moisture and makes for a delicious flavor. I would clean and spray each potato with olive oil as well. Then I would chop up red and green peppers and spray them with olive oil very lightly. I would seal them in aluminum foil and steam them. If you like red onions, slice a half one for great flavor. Also, use garlic powder and seasoned salt on the potato as desired. Don't forget the sour cream and butter, if warranted. Remember this, What shall we then say to these things? If God be for us, who can be against us? - Romans 8:31. The Lord daily loadeth us with benefits, even the God of our salvation. Selah. - Psalm 68:19. I wish you well on your cooking adventure. Peace, Love and God Bless.

Baked chicken can be a very simple dish.
Cut chicken up in pieces, or buy it that way.
(To reduce the fat, you can remove the skin.)
Simplest coating is the generic mixes, from bulk foods.
You can make up your own from cornmeal or corn flakes.
You can add a little poultry spice, or BBQ red pepper.
Put a cup of coating mix in a large baggie.
Drop in chicken pieces, one at a time, shake until coated.
Arrange in shallow baking pan, sprayed with oil, (PAM).
Bake in oven at 425F for about 1 hour, test for doneness.
If you don't have a meat thermometer, cut with sharp knife.
Flesh should be white not pink, & juices run clear.
Slice potatoes 1/8" thick into a oil-sprayed casserole dish.
Layer with red & green bell pepper slices, then more potato.
(or use mushrooms, onions, celery, etc.)
Pour over a mixture of 1 cup milk & mushroom soup.
(or cream of celery, cream of chicken, etc.)
Cover with foil & bake in 425F oven 45 minutes until bubbly.
Remove foil, sprinkle with grated cheese (cheddar, etc.).
Return to oven until melted, or brown under broiler.

A style of baked chicken I like is with beer and rosemary. I use a rotisserie oven but if you don't have one just set your bird upright on an open can of beer (yep, right up inside the bird) set it inside a deep pan made for the oven. Coat the bird with a brush dipped in a mix of salt, rosemary, and olive oil. Bake at 350 for about 45 min ( longer for a big bird) The bird will be browned outside but moist inside....yummy!
