Wouldn't you go crazy if you found out there's human blood in your food? Its human instinct to react that way.
Seriously, there are no studies that shows that eating of blood can affect your brain and make you go crazy. Unless where dealing about rabbies. Knowing that blood can carry Hepa A or E and other diseases can make people react crazily.

Crazy Angry if they know what you did! What they will become is at high risk for any bloodborne pathogens. And if you're serving tainted Mad Cow meat, then, yes, they will go "crazy" if not properly treated.
