It depends on what you want to achieve by that - maintain weight?
if have been losing weight on 1500cal/day diet (and for how long) then going straight to 2000cal/day might make you gain weight. Try adding 50-100cal/day every week - eat 1550-1600cal/day this week, 1600-1650cal/day next week, 1650-1700cal/day a week after etc. till you get to 2000cal/day and also watch what happens - if you gain more than 5lbs in a month or two - go down again a little and up slower.

No, unless you are getting thinner and thinner on your current diet, you must be burning off exactly what you are eating. If you start eating more, but still burn off the same amount, you will gain weight because you are now eating more calories. It is simple math. Eat 1500 - burn 1500 = 0 net loss or gain, but eat 2000 - burn 1500 = 500 calories net gain.

You should always eat what you want because that is what your body wants. When we crave something that is the body telling us that it needs the nutrients from that thing. If you eat the same amount that oyu burn off then it should be fine. bearing in mind you do 2 hr bikerides then u will be fine eating 2000cals.

Best of luck.
