Oh man I can eat them every which way. I love them bbq'd pickled, stuffed, eggplant parmesan......any good recipes you want to share?

Eggplant parmesan is so easy...just slice thing, coat in flour and fry in lightly coated pan. Make your own sauce (or buy a simple tomato/basil sauce) and layer eggplant/sauce/parmesan, and continue on.
I'm sure you can even skip the pan step and just shove it all in the oven and add mozarella cheese too to the mix, and just cook covered with foil for about a half hour.
My mom boils small ones and scoops the centres out, mixes the scooped stuff with bread crumbs or stuffing mix, chops green olives in there too...drizzles with olive oil and bakes...did it with tuna in that mix once too...amazing!

Did you ever just cut them up like french fries
and deep fry them? OMG!
You have to eat them as soon as you cook
them, tho. So good.
My favorite dish is one of yours tho -
eggplant Parmesan...I now serve it on fettuccine.
(I also make chicken the same way . Great!)
Oh man, and I have to go in there and make some
crummy pork chops!

I only 'discovered' eggplant recently. I usually just dice it and roast it with other vegetables, but more and more I find myself experimenting with it on its own. ;-)
I gave this recipe to someone a few weeks ago; I've made it for company a few times, and it's been a big hit:
Asian-style Eggplant
1 good sized eggplant, cut in thick sticks
2 tbsp. soy sauce
2 tbsp. rice vinegar
1/2 tsp. dried ground ginger
1 tsp. sesame oil (olive oil also works)
dash of hot sauce
1 sm. clove garlic, minced
1/3 c. chopped scallions
Salt the eggplant, and drizzle slightly with olive oil before roasting at 400-425 degrees until tender.
Meanwhile, whisk the rest of the ingredients together. Pour over eggplant just before serving.

I am not stuck on them but I know someone who loves them too. In the U.K. they are more usually called aubergines, since French is preferred for cooking here, like baby marrows are known as courgettes. I dug out the shell of an eggplant and filled it with a mixture of rice with black pepper seasoning, grated Cheddar cheese, chopped tomatoes and chopped eggplant flesh, and it went down well.

It doesn't matter if your eggplant question was neither offensive nor profound. The fact is that it wasn't a question according to the Community Guidelines, it was "chatting" which is one of the most common violations reported here. Michael Angelo's Eggplant Parmesan frozen dinner that we buy at the supermarket. Yummm
It is found in the freezer department and you just pop it into the microwave. We try to keep them on hand in our freezer.

I love my eggplants, I love them even more stuffed and in my tomato sauce...yummmy., my eggplant parmesan is so good with leftovers. even the day after cold it's amazing with a good slice of salami. Yum

I saw the take home chef the other day make a lasanga eggplant.he layered it.Looked so yummy!I bet recipe is on his tlc website.

i'm bumbed cus my eggplants didn't do so well in my garden. i'm sticking to buying them fromt the farmers market.
