does anyone know how to make mayo without using lemon juice or vinegar?

Basil Mayonnaise
Ingredients
1 large egg
1 teaspoon freshly squeezed orange juice
1/3 cup chopped fresh basil
2 tablespoons chopped green onions
1 teaspoon salt
8 turns fresh ground black pepper
1 cup olive oil


Instructions
Combine the egg, orange juice, basil, green onions, salt, and pepper in a food processor or blender and puree for 15 seconds. While the processor is running, slowly stream in the oil.

When all of the oil has been added, turn off the machine and scrape down the sides and cover. Process again until the mixture becomes a thick mayonnaise. Remove the mayonnaise to an airtight container and refrigerate for at least 30 minutes. Use within 24 hours.

Yield: 1 cup

some recipes make mayo without lemon juice or vinegar (they use mustard instead) but note that the acid acts as a natural preservative to the mayo so it wouldnt spoil easily. Lemon or vinegar also act as emulsifier or stabilizer (not sure which is which) so the mixture wouldnt break, but most important is that acid sort of cooks the eggs to kill salmonela.

The very very basic of making mayo is:
Take the yellow of an egg and a cup of oil ( I mean a cup where you drink your coffee from [ 125 ml]) and a teaspoonfull of moustard ( not sweet like bavarian or danish).
Take an electric hand mixer, let it turn slowly. Put the egg in a pot, and let the oil drop very, very slowly into the egg, while stirring it with the mixer. At the end add the noustard.

You don't have to use an acid in mayo, it won't have the tang but will still be good. If you do want a little acid you might try white wine if you have it. Otherwise just whisk the egg yolk and drizzle in the oil. I prefer grapeseed oil but any light oil will do.

no, you need the acid to change the oil into a solid!!
